Minestrone Soup Recipe

Who says making homemade minestrone has to take hours? This recipe takes a delicious shortcut with a boost from Cucina Fresca marinara sauce, adding rich, slow-simmered flavor to the tomato base in no time. Packed with healthy veggies, beans, and pasta, it’s the perfect balance of convenience and comfort. One pot, endless flavor, and ready to warm you up on even the chilliest days!
- 2 jars Cucina Fresca Marinara Sauce
- 3 Tablespoons olive oil
- 1 medium onion, diced
- 1 cup celery, diced
- 1 cup carrots, diced
- 4 cups stock (chicken or vegetable)
- 1 can kidney beans, drained and rinsed
- 1 bag green beans, trimmed and sliced into 1" lengths
- 1 medium zucchini, diced
- 1/2 bag power greens, chopped
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/2 tsp. dried thyme
- Optional: 1 package rigatoni or other pasta
- salt and pepper to taste
- parmesan cheese for topping
- Sweat onions, celery and carrots in olive oil over medium heat until soft, about 10 minutes.
- Add fresh Marinara, stock, kidney beans, green beans, zucchini, oregano, basil and thyme to pot.
- Simmer for 20 minutes.
- Add pasta, if using, and simmer until pasta is cooked, about 5-10 minutes depending on pasta.
- Garnish with parmesan cheese.
