Chicken Salad Wraps

Indulge in a taste of the tropics with our Tropical Chicken Salad Lettuce Wraps. Packed with juicy chicken, vibrant fruits, and a hint of island-inspired flair, these wraps offer a refreshing twist on a classic chicken salad, all wrapped up in a fresh and healthy lettuce leaf, making a light and satisfying meal.

Wrap Ingredients:

  • 1 head Bibb lettuce
  • sliced avocado
  • sliced mango

Tropical Chicken Salad Ingredients:

  • 2 cups Carso's diced chicken
  • 1 cup fresh pineapple, cut into small pieces
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup cashews, chopped (optional)
  • Salt and black pepper to taste

For the Dressing:

  • 1/4 cup plain or coconut Greek yogurt 
  • 2 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon ground ginger
  • Salt and black pepper to taste

Instructions:

  1. In a large mixing bowl, combine the chicken, pineapple, bell pepper, red onion, cilantro, coconut flakes, and cashews (if using). Mix well to combine.

  2. In a separate small bowl, whisk together all the ingredients for the dressing: Greek yogurt, mayonnaise, lime juice, honey or maple syrup, Dijon mustard, ground ginger, salt, and black pepper.

  3. Pour the dressing over the chicken mixture in the large bowl. Toss gently until all the ingredients are evenly coated with the dressing.

  4. Taste the salad and adjust seasoning to taste.

  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.

  6.  Place 8 washed and dried Bibb lettuce leaves on a flat working surface.

  7. Spoon 3-5 Tablespoons of chicken salad into each lettuce leaf. Enjoy your taste of the tropics!

  8. Top with avocado, sliced mango, or sliced macadamia nuts.

  9. Fold each lettuce leaf gently toward the center and roll to create a wrap.

 

The dressed chicken salad can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days. Once wrapped in the lettuce, it's best to eat immediately.
