Irish soda bread is traditionally made with three ingredients: buttermilk, flour, and baking soda. This recipe, however, is not so traditional. We like ours a little sweet, so we added raisins, sugar, butter, and salt to the mix.
Colcannon is more than just mashed potatoes; it's a flavorful blend of creamy mashed potatoes, tender cabbage, kale, chard, or other leafy green, and the rich taste of butter.
St. Patrick's day is the perfect time to make this a classic Irish comfort dish filled with meat and vegetables in a rich gravy and topped with a golden-brown mashed potato crust. We swapped the tradition ground lamb for ground beef.
