Parfait is the perfect no-bake treat for hot summer days. Alternating layers of fresh, macerated berries and fluffy vanilla whipped cream make this red white and blue dessert a patriotic addition to your summer celebrations!

Macerated berries

Maceration is a technique that involves soaking fruit (in this case, strawberries and blueberries) in sugar. This process softens the strawberries, which brings out the juices and sweetness. 

Place the strawberries in a large bowl, add half of the sugar, and gently toss to distribute evenly. Let the berries sit for 15 minutes and stir again. Let sit for another 15 minutes, or until juices are drawn out. Set aside.

Place the blueberries in a separate large bowl, add the remaining sugar, and gently toss to distribute evenly. Let the berries sit for 15 minutes and stir again. Let sit for another 15 minutes, or until juices are drawn out. Set aside.

Whipped cream

Pour the heavy whipping cream, sugar, and vanilla into a chilled bowl and whisk on high speed until medium to stiff peaks form.

Assembly

In each dessert glass, add a layer of strawberries, spoon the whipped cream, followed by the blueberries. Top with whipped cream.

Garnish with additional berries and graham cracker crumbs and a star-shaped cookie to finish the look.
