Delight in a creamy, no-bake cheesecake adorned with fresh berries arranged in a patriotic flag design, perfect for celebrating America's birthday.
Ingredients
- 3-1/2 cups graham cracker crumbs
- 3/4 cup Butter, melted
- 48 oz. cream cheese
- 2 pints raspberries (or sliced strawberries, if preferred)
- 2 pints blueberries
- 2 cup Heavy Whipping Cream
- 1 Tbsp lemon zest
- 2 cup powdered sugar
- 2 tsp. vanilla extract
- Whipped cream
Instructions
- In a bowl, combine the graham cracker crumbs and melted butter. Once combined, press the mixture into a 13 x 9-inch rectangular pan, creating an even base along the bottom.
- In another large bowl, combine the cream cheese and heavy cream and beat until smooth, three to four minutes. Add the sugar, lemon zest, and vanilla, and beat until smooth and fluffy.
- Pour the cream cheese mixture into the pan, cover with plastic wrap, and refrigerate for six to eight hours.
- Once the cheesecake has set and is firm, arrange blueberries in a square over the top left quarter of the cake. These will make the blue part of the flag.
- Arrange raspberries (or sliced strawberries) in horizontal stripes over the remaining cake, leaving stripes of white exposed. These make the red stripes of the flag.
- Fill in the white areas by piping in a stripe of whipped cream to make the white stripes.
- If desired, you can also dot a few dollops of whipped cream over the blueberries to represent stars.
- Show off your U.S. flag cheesecake!
