Farm-Fresh Frittata with Bacon and Spinach

What you need
12 oz. Daily’s Cherry Applewood Smoked Bacon
10 Smith Brothers Farms Eggs
2/3 cup Smith Brothers Farms Organic Whole Milk
3/4 cup Tillamook Shredded Cheddar Cheese
3/4 cup crumbled feta cheese
2 or more cups Fresh Express Baby Spinach
Chopped scallions, sliced tomatoes, and Smith Brothers Farms Sour Cream, to garnish
Instructions
Cook bacon in a cast-iron skillet. Remove and let cool, then chop into pieces. Wilt the spinach in a skillet.
In a large bowl, whisk eggs with milk. Stir in feta cheese, 1/2 cup cheddar cheese, cooked bacon, and spinach. Pour most of the bacon grease out of the skillet and scrape up any bacon pieces from the bottom. Pour in your egg mixture. Cover skillet and cook on medium-low heat on the stovetop for about 25 minutes until egg puffs and is cooked through.
Sprinkle 1/4 cup shredded cheese on top and broil uncovered until cheese melts. Garnish with fresh tomatoes, scallions, and sour cream. Enjoy!
