Grilled BBQ Chicken Pizza with Avocado Crema
What you need
- 1 Essential Baking Thin Pizza Crust
- 1/2 cup ranch dressing
- 3 oz. Tillamook Shredded Mozzarella
- 3 oz. Tillamook Shredded Cheddar Cheese
- 3 oz. Applegate Grilled Chicken Strips, roughly chopped into smaller pieces
- 1/2 red onion, sliced and (optional) sauteed
- 1/4 cup bbq sauce
- 1/2 medium very ripe avocado
- 4 tbsp. Smith Brothers Farms Milk
- 1/4 cup Smith Brothers Farms Sour Cream
- Salt and pepper
Instructions
Pizza
Preheat grill to the highest setting on one side and low on the other side. Spread the ranch dressing on the crust leaving a little edge.
Mix the cheeses together and sprinkle a light layer on the crust, followed by the chicken and onion. Add the remainder of the cheese and top with a drizzle of the BBQ sauce.
Place pizza on side of the grill that does not have direct heat, and close lid. Let the pizza bake for 7-10 minutes or until cheese is melted and bubbly. While the pizza is on the grill, make the avocado crema. (See below)
After 7-10 minutes, move the pizza to the side of the grill with direct heat, and let the bottom crisp for 1-2 minutes. Remove from heat and drizzle the avocado crema over the top. Serve and enjoy!
Avocado Crema
Mash avocado in a medium bowl with a fork until broken up, but still lumpy. Add in sour cream and mix to combine. Using a hand mixer, pour in milk until the mix resembles the consistency of ketchup (you want to be able to drizzle on to the pizza). Add salt and pepper to taste. Set aside until pizza has finished grilling.
