Huevos Ahogados
Huevos Ahogados is a Mexican comfort dish that is easy to make and full of flavor. This recipe features organic pasture-raised Stiebrs eggs poached in a rich, warm tomato sauce. The name "huevos ahogados" means "drowned eggs" in Spanish, referring to the way the eggs are submerged while poaching to perfection.
This one-skillet meal can be served for breakfast, brunch, lunch or dinner. This recipe is versatile: add seasonal vegetables, change up the spices, or top it with your favorite cheese. Huevos Ahogados is a satisfying comfort dish that is quick to prepare, making it a great recipe to have in your repertoire as we head into the cooler months.
Heat olive oil in a large skillet over medium heat. Add onion, garlic and jalapeno to the pan, cook for 5-6 minutes or until soft.
Add in the cumin and paprika and cook for 1 minute. Stir in the fire roasted tomatoes and cook for an additional 5 minutes.
Using the back of a spoon, create 4 wells in the tomato mixture and crack an egg in each well. Sprinkle with salt and pepper. Cover the skillet and cook for 7-10 minutes or until the eggs are cooked to your desired doneness.
Garnish with green onions or cilantro, and queso fresco. Serve with corn tortillas, tortilla chips, or crusty bread.
