Apple Fritter Cake with Browned Butter

Ingredients
- 1 cup browned butter* (2 sticks)
- 1 cup regular sugar
- 2 Smith Brothers Farms Eggs
- 1 ½ tsp. vanilla extract
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 cups flour
- 1 cup Smith Brothers Farms Buttermilk
Brown sugar topping
- 1/3 cup Smith Brothers Farms Unsalted Butter
- 1/3 cup regular sugar
- 1/3 cup brown sugar
- 2 tbsp. cinnamon
Apple filling
- 2 Granny Smith apples, finely diced
- 1 tsp. cinnamon
- 2 tbsp. flour
- 2 tbsp. sugar
Instructions
Preheat to 325°F.
Mix the brown sugar topping ingredients in a small bowl and set aside. In a separate small bowl, mix the apple filling ingredients in a small bowl and set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy. Add the eggs one at a time just until mixed. Followed by the vanilla extract, baking powder, baking soda, and salt. Add flour, alternating with the buttermilk, beginning and ending with the flour. Mix just until combined.
Grease a 9x13 pan or Bundt pan with about 1 tablespoon of soft or melted butter. Spread half the batter in the pan and add the brown sugar topping in small lumps. Evenly spread the apple filling over. Add the rest of the batter and top with the remaining brown sugar topping.
Bake for 40 to 45 minutes or until a skewer comes out clean. Allow to cool for 30 minutes and serve with whipped cream and a sprinkle of cinnamon.
*Baker’s Note: To make brown butter, I suggest doing it the night before so it can come to perfect room temperature again before baking with it. I would also add one extra tablespoon of butter to account for any lost liquid in the browning process!
