Three Cheese Mixed Tortellini Antipasto Skewers
Yields: 12 skewers
What you need
- 1 package (8 oz.) Carso’s Three Cheese Mixed Tortellini
- Extra virgin olive oil
- 24 cherry tomatoes
- 12 fresh mozzarella balls
- 12 Coro Agrumi & Finocchiona Salami, folded into quarters
- 24 pitted olives
- Fresh basil, optional
- Balsamic glaze, for drizzling
- 12 wood skewers
Instructions
Bring a pot of water to a boil and cook tortellini according to the package instructions. Drain the cooked tortellini into a strainer and rinse under cold water. Drizzle with extra virgin olive oil and toss. Set aside.
Thread each skewer with tortellini, tomatoes, mozzarella, salami, olives, and basil. Repeat until the skewers are full. Place the skewers onto a platter and drizzle with the balsamic glaze just before serving.
