Strawberry Spinach Salad with Chicken
This is one of our favorite salad recipes. Loaded with baby spinach, chicken, walnuts, crumbled feta, and fresh red-ripe strawberries - all of which are then tossed in a slightly sweet champagne vinaigrette. There are just so many things to love! It's full of color and sweetness. The walnuts add a nice crunchy texture. Plus, it only takes a few (or so!) minutes to put together and have on the dinner table.

Strawberry Spinach Salad
What you need
Salad
- 8 oz. Carso's Diced Grilled Chicken Breast or sliced turkey
- 1 bag Earthbound Farm Organic Baby Spinach
- 6 oz. organic strawberries
- 3 oz. crumbled feta
- 1 oz. walnuts
Vinaigrette
- 2 tbsp. champagne vinegar
- 6 tbsp. olive oil (don't use extra virgin for this dressing!)
- 1 tsp. sugar
- 1 tbsp. shallots, finely minced
- Salt and pepper, to taste
Note: This makes approximately a 1/2 cup of dressing. If you don't need all of it, store in an airtight container to use later.
Instructions
Slice strawberries lengthwise and place them in a large bowl. Coarsely chop chicken slices, and place them in the bowl with strawberries. Add feta, spinach, and walnuts. Set aside.
Measure vinegar into a small bowl. Add sugar, and whisk until sugar is dissolved. While whisking, add the olive oil slowly. Keep whisking until oil is completely incorporated. Add salt and pepper to taste, and whisk until combined.
Pour vinaigrette over salad, and toss to combine. Serve and enjoy!
