Wash and dry your fennel. Slice into 1/4th-inch slices. Mince your shallot, and measure out 2 tablespoons. Put a large pot of water on to heat up according to ravioli package.

While you're waiting for the water to boil, heat 12-inch skillet over medium-high heat. Drop your butter into the pan, and once it has melted, add your sliced fennel. Season with salt and pepper. Stir occasionally until fennel is fragrant and soft, about 4 minutes.

Add your shallot and continue to stir until shallot is soft and translucent (another 4-5 minutes). If your fennel or butter begins to brown too much, reduce your heat. Once your water has heated up sufficiently, add some salt to the water then add the ravioli and cook according to the package.

Drain the ravioli and give it a quick toss in the skillet with the butter, fennel, and shallot mixture. Season one last time with salt and pepper. Serve immediately with Essential Baking Italian bake-at-home bread.
