Parfait is the perfect warm-weather treat. Enjoy alternating layers of fresh, macerated strawberries and fluffy vanilla whipped cream in every bite. Plus there’s no baking involved, which means it won’t heat up the house!

Macerated strawberries

Maceration is a technique that involves soaking fruit (in this case, strawberries) in sugar. This process softens the strawberries, which brings out the juices and sweetness. 

Place the strawberries in a large bowl, add the sugar, and gently toss to distribute evenly. Let the berries sit for 15 minutes and stir again. Let sit for another 15 minutes, or until juices are drawn out. Set aside.

Whipped cream

Pour the heavy whipping cream, sugar, and vanilla into a chilled bowl and whisk on high speed until medium to stiff peaks form.

Assembly

In each dessert glass, add a layer of strawberries, spoon the whipped cream, followed by more strawberries. Top with whipped cream.

Garnish with sliced strawberries and graham cracker crumbs.
