Ingredients:
- 4 Tablespoons unsalted butter
- 1 cup Ellenos Plain Unsweetened yogurt
- 3-4 onions, chopped
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon Worcestershire sauce
- serve with: baby carrots, potato chips, or other dippable veggies & snacks.
Instructions:
-
Caramelize the onions:
-
Heat a skillet over medium heat and add butter to melt.
-
Stir in the onions and add salt and pepper.
-
Cook for 5 minutes, until the onions start to soften.
-
Turn heat down to low and cook, stirring often, until the onions are golden brown and sticky. This may take as long as 60 minutes , but it's essential you do not rush this step. Stir the onions often to prevent burning. If they get dry and start to crisp, add a little liquid (a splash of water or wine) to prevent burning.
- Let the onions cool. Since they're so time-consuming, it can be helpful to caramelize the onions up to 48 hours before you make the dip.
-
- Combine the Ellenos yogurt, caramelized onion, spices, and Worcestershire sauce in a small mixing bowl.
- Mix until completely uniform. Adjust spices to personal preference, as necessary.
- Garnish with fresh parsley or chopped green onions, as desired.
- Chill at least 1 hour to allow flavors to meld.
- Serve with your favorite potato chips.
- Store in an airtight container in the refrigerator for up to 5 days.
