Easy Chocolate Mousse Recipe

To simplify the process, we opted to avoid heating and cooling eggs, instead thickening the mousse with gelatin. The key to a light, fluffy mousse is to whip the cream and incorporate plenty of air–that’s what gives mousse its irresistible texture. 

Ingredients

  • 1 ½ cups heavy whipping cream (chilled)
  • ¼-1/3 cup cocoa powder (use the best quality cocoa you can since it will be the basis for the mousse’s chocolate flavor
  • 4-6 Tablespoons powdered sugar
  • 1 packet (about 2 1/4 teaspoons) unflavored gelatin dissolved in 1/4 cup of warm water (then cooled to room temperature)
  • Optional: 1/4 teaspoon vanilla extract
  • A pinch of salt
  • Garnish with fresh berries, or whipped cream

Instructions

  1. Whip the Cream: In a separate bowl, whip the chilled heavy cream until slightly thickened. soft peaks form.
  2. Add cocoa & sugar: Carefully add the cocoa and sugar and continue whipping cream until soft peaks form. (The peaks should rise off of your whisk, but not stand fully upright yet.)  into the whipped cream in batches, working softly to keep the mousse light and airy.
  3. Add gelatin and vanilla extract, if using. Continue beating whipped cream until stiff peaks form. (The peaks should stand up when you hold up the whisk)..
  4. Chill and Serve: Divide the mousse into serving glasses and refrigerate for at least 2 hours to set. Before serving, garnish with cocoa powder, chocolate shavings, or fresh berries.

Tips for the Best Chocolate Mousse

  • Use high-quality chocolate for the best flavor.
  • Don't overmix when folding in the whipped cream. Keep the texture light and fluffy.
  • Chill your mixing bowl and whisk before whipping the cream for better results.
  • Make sure your bowl is clean and oil-free. Avoid plastic bowls in favor of glass or metal, since plastic bowls can retain oil residue and make whipping cream feel impossible.
