We have a new crop of delicious fresh produce in our Harvest Box, starting with deliveries on Tuesday, September 21st! Here's what inside:

And, if you are wondering what to make with this week’s peak-season produce, Pacific Coast Fruit Company has generously shared three chef-inspired recipes from their kitchen using the same delicious fresh produce delivered to your door.

Butter Poached Radish with Cilantro Pistou

 Butter Poached Radishes

Makes 2 servings

What you need

  • 1 bunch radishes, stems removed and halved
  • 1 stick Smith Brothers Farms Unsalted Butter
  • 1/2 cup water + 1 tbsp. water
  • 1/2 bunch cilantro, stems removed
  • 1/8 cup extra virgin olive oil
  • 1 tsp. garlic, minced
  • 2 tsp. salt

Instructions

Place butter, 1/2 cup water, and 1 teaspoon of salt in a small saucepan on medium heat. Once the butter is melted and the mixture is on a low simmer, add radishes to the pot. Simmer for 8-10 minutes until the radishes are fork tender. Set aside.

In a blender or food processor, place cilantro, garlic, 1 tablespoon water, 1 teaspoon of salt, and olive oil. Blend until mixture resembles a pesto.

Drizzle cilantro pistou on the radish and serve immediately.

Baked Italian Squash with Gruyere Cheese

Baked Italian Squash

Makes 2 servings

What you need

Instructions

Preheat oven to 400F.

In a small mixing bowl, whisk together eggs, cream, salt, and pepper.

In a large mixing bowl, thoroughly combine squash, Gruyere, and cream mixture.

Using pan spray or olive oil, coat the bottom and sides of a 9” pie pan. Place the squash mixture into the pan and evenly spread it into the pan.

Cover the pan with foil and bake for 30 minutes. Remove foil and bake an additional 7 to 8 minutes until golden brown. Pull from oven and let sit for 10 to 15 minutes before serving/

Spinach Salad with Bartlett Pears and Gorgonzola

Spinach Salad with Bartlett Pear

What you need

  • 1 bunch spinach, washed and dried
  • 1/2 Bartlett pear, thinly sliced
  • 1/4 cup gorgonzola cheese crumbles
  • 3 tbsp. of your favorite vinaigrette dressing

Instructions

Combine the spinach with vinaigrette dressing, divide into two bowls and top each with pear slices and gorgonzola crumbles
